How To Make Marocan Fakkas 

Fakkas are favorite cookies in morocco,different design and test,not too much sweet but delicious Biscuits.

Ingredients

1 kg. flour
1 bowl sugar (300 sugar )
1 bowl oil (1/4 liter )
1/8 tsp.salt
100 g golden sesame seeds
1 class of tea almond toast and chopped
1 class of tea raisins, soak in warm water until plum,then drain it.
1 class of tea orange flower water
3 packets of baking powder
1 pack of vanilla sugar or 
1 ts vanilla extract
6 eggs
1 egg yolk beaten with 3 to 4 tbsp. of coffee,optional

Preparation:

Preheat your oven to 350F and lightly oil a baking sheet.
In a large bowl mix the eggs, sugar, salt, vanilla extract or vanilla sugar oil and orange flower water. add almonds,sesame, raisins, and anise seeds,then add flour gradually,stir the mixture with your fingers.till you complete the flour then add baking powder mix well.Dough will be soft,If too much soft you can add some  flour more.Divide the dough into a large balls. Roll each piece of dough into a long stick (about 30 cm. long and 5 cm wide)
place on a greased baking sheet,make sure there is space between them in the baking tray.
Brush them with a beaten egg yolks and coffee,pierce the rolls with a fork in several places to let the steam escape.
Place them on an greased baking sheet and let them brown in the oven 15 to 20 minutes.
Cool the rolls to room temperature.cut the slice with sharp knife about 1/2 cm thick.then

Place the slices on an ungreased baking sheets, and bake for 15 to 20 minutes again until medium golden brown. Remove the cookies to a rack to cool.Store fakkas in an airtight plastic container for long time.They can also be frozen for several months.
