How To Make Sellou/sallou (Morocan Sweet)

This is the best delicious rich and healthy Sweet Morocan sallou, you can save it for a long time.Step by step ingredients.This is Special for Ramdan and other parties.

Ingredients:
4 kg. flour
3 kg  golden sesame seeds
1 kg.  Almonds
2 kg.  sugar powder
1 1/2 liter oil
1/2 kg.butter
1/2 kg flour
125 g. cinnamon
125 g. anise seeds
1/2 tsp salt
1 tsp mastic or gum Arabic, (optional)
Sellou takes 2 to 3 days to prepare.

Preparation:

1.Sesame Seeds-wash the sesame seeds with water to remove the dirt.Drain  and place them a large baking sheet to let them dry in the sun, it will may take 1 to 2 days.when it dry,remove any stones and sticks or black burn sesame seeds.Now toast the sesame in pan on medium flame,stiring every few minute,until  nutty in flavor.Keep aside to cold,when the sesame is cool grind half the sesame seeeds.
2. Almond-Soak the almonds in hot water and leave it for 1 or 2 minutes. then drain the water, clean skin of  the almonds with your hands,dry water with kitchen towel or in the sun.Now put in  frypan with 2 tsp of oil and stiring until light golden brown.
Grind just half of the almonds , and the other half choppe them.
3. Flour-Brown the four on medium flam stiring the flour after few minute till golden brown.
4. Anise Seeds-Clean and grind them.
5. cinnamon- Grind the cinnamon
6. Gum Arabic- crushed to a powder with 1 tsp of sugar.
7. Butter- Melt the butter over low heat until the milk solids separate to the bottom of the pot and a foam forms on top. Carefully skim off and discard all the foam.(donn't burn it)
8.Keep the small bowl of Chopped Almond and unground sesame seeds for decorate.
9.When (sesame seeds, Almonds, anise seeds,flour;cinnamon,gum arabic ) every thing is ready,toast 1/2 kg. flour with oil and keep it for 24 hours.Second day melte the butter, and keep it a side,We need warm butter.Mix 
all dry ingredients sesame seeds, Almonds, anise seeds, browned flour, sugar power,cinnamon,gum arabic and salt then add toasted flour with oil,and warm butter mix well, need using your hands.untill it becomes creamy.You can use mixture but for mixture just use sesame ,almond powder.then with hand mix unblend sesame and chopped almond.Sallou is done.Keep in an airtight plastic container and decorate with bowl of sesame seeds and chopped almonds.

Note: Note: You can toast the flour, sesame seeds and Almonds in a 400° F (200° C) oven for 15 to 20 minutes with stirring after few minutes.
